Caramel Set is a white powder that melts at a high temperature. It's generally used while making homemade Caramel Apples or Caramel Corn from scratch. Not only does it promote an even mix, it also forms an ultra-thin topcoat of vegetable oil which creates a moisture barrier. Normally you'd use about 1 Tablespoon of Caramel Set in a Caramel Corn recipe that uses about 3 pounds of sugar (white and/or brown). It can also be used in Gold Medal's Concentrated Caramel Corn Mix (#2094) or One Step Caramel Corn Mix (#2092).
