Corn Treat Mixes are the simple way to make perfect Caramel and Gourmet Candy Corn. The works already been done for you. Just add water, sugar, and shortening (Naks Pop Coconut Oil Bars work great) to Corn Treat Concentrated Mix, and cook to 285°F.
Corn Treat mix is already flavored - Caramel, Chocolate, Cinnamon Crunch, and Mango. For Gold Medal's additional Candy Corn flavors (or your own unique candy corn) use Gold Medal's Basic Corn Treat Mix (GM2096) along with Corn Treat Candy Glaze Flavors (GM2281-2316). Be sure to use white unflavored coconut oil (GM2635 White Coconut Oil Pouches Naks Pop 2 ) to get the truest color and flavor.
For the best coverage, we recommend a mushroom type corn for less breakage, and wet-popped (not air-popped) within the past few hours. A Naks-Pop Coconut Oil Bar (Barr) or Naks Pop2 oil pouch (GM2638) is a convenient way to get the required 4oz. of oil when the yellow oil color will only enhance the finished product.
One package (22oz - 623g) is enough for a 5 gallon cooker/mixer. Simply add 4 cups of white sugar, 14oz. of water, and 4oz. of oil. Cook to temperature on package (275°-300°F). When set to temperature, add 5 gallons(22oz.) of popped popcorn. Mix well. Spraying with a few squrts of a corn separator like GM2250 Free N Easy, will keep it from clumping.
