Old Fashioned Caramel Dip 5 Lb. blocks Each 5 lb. block does 35 to 40 apples. Heat to 170° to 180°F in a double boiler. If you desire a smoother finish, add 4 oz. of unsweetened evaporated milk to each 5 lb. block.
Ideally apples should be purchased direct from a Produce Wholesaler and should not have any coatings. Apples purchased from Grocery Stores may have wax or coatings that may cause the Caramel not to adhere properly to the apple.
To prevent burning, always melt caramel in a double boiler (water bath), never direct heat.
